Most folks agree that Cabernet Sauvignon is the King of Red Wine. It is the predominant varietal in Left-Bank Bordeaux reds, but it is planted in the major wine regions of the world. Its flavors are dark fruit (currant, plum & black cherry), with notes of jam, bell pepper, olive, mint, tobacco, cedar and anise (depending on the climate and soil conditions). Cabernet Sauvignon is also tannic, which is why it generally ages in oak, which soften the tannins.
